RECIPE OF THE MONTH
Fourth of July Turkey Potato Salad
3/4 lb SMOKED TURKEY BREAST, cut into 1/2-inch cubes
1 lb Red Potatoes, cooked, cut into 1/2-inch cubes
1 Cup Chopped Mild Onion
1 Cup Milk
1/2 Cup Plain Non-Fat Yogurt
1/4 Cup Low-Fat Mayonnaise
1/4 Cup Cilantro, chopped
1 Tbsp Grainy Dijon-Style Mustard
1/2 Tsp each Salt and Pepper
1 Cup Chopped Celery
1 Cup Chopped Red Bell Pepper
In a medium bowl combine turkey, potatoes, onion, celery and bell peppers.
In a small bowl combine yogurt, mayonnaise, cilantro, mustard, salt and pepper.
Gently fold into turkey and vegetable mixture.
Serve immediately or cover and chill 1 to 2 hours.
To serve, garnish with fresh cilantro sprigs.
Nutritious: A 3 ounce serving of skinless turkey breast has more protein than chicken or beef and zero percent saturated fat.
